About Me!


     Hi, I’m Aisling.  (It’s pronounced “Ash-ling,” in case you’re wondering….and don’t worry, lots of people wonder!) Aisling is a popular name in Ireland, where I was born.  “Aisling” is the Irish word for a dream. 🙂

Speaking of dreams, everyone is always interested to learn how Aisling’s Cookies came about so I’m going to share my story with you! About 5 years ago, I dreamed of starting my own cookie business. And sometimes, dreams really do come true!

I have always considered myself a hobby artist. Ever since I was a little girl, I have been happiest painting and drawing.  I made cupcakes and cakes in the past, but in 2014, my sister mailed me my first cookie cutter and asked if I could make 100 lab coat cookie favors for my brother-in-law who was graduating from medical school.  And so, my love affair with cookie decorating began.  I taught myself how to create royal icing. Through many long nights of trial and error, I not only made lab coats, but also prescription bottles, stethoscopes and little pill cookies.  I found my passion! I started getting requests for cookie platters from that very graduation party. I began collecting cookie cutters and I attended sugar art conventions around the country.  In July 2016, I resigned from my staff position as an RN in a city hospital, to open “Aisling’s Cookies,” which I now run fulltime.  When I’m not busy running my cookie business, I still pick up per diem shifts as an RN and I spend time with my husband and raise 4 young children.
